Looking for easy no-bake cookies? Chocolate, oatmeal, peanut butter – what’s not to love?

This is my hubby’s recipe, and he’s an awesome cook. Try it. It’s quick and easy and oh so yummy!

I wanted to share this recipe with you because it is quick and easy, and they taste so good! But, it was a challenge because my husband doesn’t follow a recipe, it’s all in his head, including the measurements. You know.  He uses a “dash” of salt and a kitchen spoon for adding the peanut butter.

So, I had him measure out his dashes and spoonfuls so we could get a recipe written down, and this is the yummy result. 🙂

Note: you will see he is the one doing everything in the pictures.  I’m just the photographer. Oh, and taste-tester!

No-bake cookies

Ingredients:

1/2 c. (1 stick) of margarine

1/2 c. cocoa powder (I use Hersey’s)

2 c. sugar

1/2 c. milk

3 c. quick 1-minute oats (I use Quaker Oats)

1/2 tsp. vanilla

1/8 tsp. (or a dash) salt

Directions:

Lay out a sheet of waxed paper on the counter for the finished cookies.

Melt the stick of butter in a 3 qt. pan over medium heat.

Stir the cocoa powder.

Add sugar and milk. Whisk continuously.

Bring to a rolling boil and then boil for 2 minutes, whisking continuously. This is what a rolling boil looks like:

 

Turn off the burner and take the pan off the heat.

Add peanut butter, vanilla, and salt. Mix well.

Put the pan back on the still warm burner, but do not turn the burner back on.

Add the oats.

Stir with teaspoon until thoroughly mixed.

Mixing no-bake cookies.

Drop the cookies by rounded teaspoonfuls onto the waxed paper to cool and harden, depending on the humidity about 10-20 minutes.

Drop no-bake cookies by rounded spoonfuls.

Makes about 30 cookies or 2 and a half dozen. Store in an airtight container.
