School has started again, the days are getting cooler, and if you’re like me, you are thinking about pulling out those trusty crock pot meals that make busy weekdays a little easier.

One of my favorite go-to recipes is this easy crock pot turkey and dressing meal, complete with green beans and turkey gravy. It’s fast to prepare, my whole family loves it, and the whole meal is layered right in the crock pot and cooked all together.

It really doesn’t get much more simple than this.

Ingredients

1 box turkey stuffing
1 1/2 c. hot water
10 oz. turkey breast lunchmeat
12 oz. jar fat-free turkey gravy
16 oz. bag frozen green beans
pepper
1/4 c. butter or margarine

Directions

Spray the crock pot with Pam.

In a medium-sized bowl, add the hot water to the stuffing. Using a fork mix it a few times and then let it sit for several minutes to absorb the water.

Fluff up the stuffing with a fork.

Put the stuffing in the bottom of the crock pot.

Arrange the entire package of turkey, piece by piece, on top of the stuffing, until you have used the entire package.

Pour the jar of turkey gravy over the turkey slices. Use a spatula to spread the gravy so that it covers all of the turkey. This is important because otherwise the turkey will dry out while cooking.

Next sprinkle the green beans on top of the gravy. I recommend using frozen green beans, but since I had 2 bags of fresh beans I used those instead.  I think the frozen ones cook better and retain their shape better than fresh ones.  The fresh beans looked a little more “done” than when I use frozen.

Add a couple of dashes of pepper on top of the beans.  The rest of the ingredients have salt, so you won’t need to add extra salt to this dish.

Dot the top of the green beans with several spoonfuls of butter or margarine.

Put on the lid and cook on low for 6 hours.  (In the right side picture, I pushed the beans back so you could see the layers underneath)

To serve, I use a knife to carefully cut the meal into 6 pieces, right in the crock pot. It makes it easy to serve this way.

Make it into an easy Thanksgiving dinner.

If you have only a few guests, you can serve this with a dish of cranberry sauce and a pumpkin pie and you have a no-fuss Thanksgiving meal, too.

But, as I mentioned earlier, this easy crock pot turkey and dressing is one of my favorite weeknight meals because it is fast to prepare and delicious.

The ingredients are easy to stock up on.  I always have jars of gravy, a box or two of stuffing, and frozen green beans on hand. So all I have to do is purchase a package of turkey lunchmeat.  And, I think you’ll agree, there’s nothing easier than cooking an entire meal right in the crock pot!
